Abstract

Oil palm replanting produces high biomass waste, one of which is oil palm trunk. Oil palm trunk has a high starch content so it has the potential as an alternative food ingredient. This study aimed to analyze the effect of extraction time on the yield of oil palm trunk starch and compared the quality of oil palm trunk starch with sago starch. In this study, starch was obtained through an extraction process using a wet method consisting of the process of chopping and grating oil palm trunks, carrying out the extraction process, washing the starch, drying and refining the starch into powder. The obtained oil palm trunk starch was tested for starch yield, amylose content, ash content, water content, and protein content. The best time variation treatment was obtained at 6 hours of extraction with a starch yield of 10.28%; amylose content of 27.99%; ash content of 8.48%; water content of 8.48%; and protein content of 2.71%. The quality of the starch produced has approached the SNI 3729:2023 for sago starch, although its ash content remains high. However, oil palm trunk starch offers the advantage of having a higher protein content than sago. It can still be used as an alternative food product due to its good amylose, water, and protein content.
